Gorgeous scallops encased in Blue Corn Tostitos® with a simple fresh corn sauce!

Tbsp extra virgin olive oil

Tbsp butter

large fresh sea scallops, cleaned
1 ½
cup Tostitos Blue Corn Tortilla Chips- crushed fine
Pinch ground cumin
Pinch cayenne pepper
Cracked black pepper
Lemon zest and Micro greens for garnish

Step 1

Preheat a nonstick fry pan over medium high heat with the olive oil and butter.

Step 2

Pat dry the scallops with absorbent paper towel. Combine the crushed blue corn tortillas with the ground cumin and cayenne pepper. Season the scallops with cracked black pepper and dip one side of the raw scallops into the crushed tortillas to form a light crust.

Step 3

Place the scallops (blue corn side first) into the preheated pan and sear/ cook for 2 minutes. Do not turn the scallops and only turn over after the 2 minutes and when the scallops have formed a golden crust. Continue to sear the scallops on the opposite side for 2 minutes. Remove from heat and serve with the sweet corn sauce and garnish with fresh lemon zest and micro-greens. Enjoy.
