Just because the Passover rules dictate that Jewish people can’t eat any leavened foods (hence all the matzo), doesn’t mean we can’t enjoy dessert. Eggs are the magic answer here, giving these moist and cakey brownies just the lift they need, along with a delicious crackling top. Since these brownies contain no dairy, they can be served at a meat-based meal without mixing milk and meat. Also, they’re great any day for the lactose intolerant.

Preheat oven to 350°F.
In the bowl of a stand mixer beat eggs and sugar together until eggs go light yellow.
Add oil, cocoa powder, coffee and matzo meal, and beat until mixed through.
Spray an 8 x 8 inch baking pan with non-stick spray. Pour in batter and bake in centre of oven for 45 minutes.
Let cool for at least a half hour before slicing into squares.
