Traditional Italian coffee cake with mascarpone cheese.

Mix the egg whites and sugar in a bowl with an electric mixer until peaks are formed.
Mix the egg yolks and mascarpone cheese until completely blended in a separate bowl.
Fold the two mixtures together + separate them in half.
Mix the coffee + cognac together in a shallow bowl.
Dip 1 side of each ladyfinger in the coffee/cognac mixture and line the bottom of a 9 by 12 by 2-inch dish (work quickly so the cookies aren’t too soggy).
When the 1st layer is complete spread half the mascarpone mixture over the top of the soaked cookies.
Dip 1 side of each ladyfinger in the coffee/cognac mixture and place on top of the 1st layer.
When the 2nd layer is complete spread the other half of the mascarpone mixture over the top of the soaked cookies.
Place in the fridge for 2-3 hours.
When ready to serve dust the top of the tiramisu with cocoa powder or shaved chocolate.
