Light crisp meringue surrounds smooth passion fruit curds.

cup super fine sugar

tsp white wine vinegar
1
Tbsp hot water
Passion Fruit Curd

2
egg, yolks
5
Tbsp fresh passion fruit, pulp

Tbsp unsalted butter, cut into little cubes
¼
cup super fine sugar
½
cup thirty-five percent cream, whipped
cut up pieces of fruit, of your choice for garnish

Step 1
Preheat oven to 150 degrees F.
Step 2
Line a baking sheet with parchment paper.
Step 3
In a mixing bowl add egg whites, sugar, vinegar and hot water.
Step 4
Whip until soft peaks form. Spoon meringue onto baking sheet in 4 individual oval shaped mounds.
Step 5
Place in oven for an hour and 10 minutes or until the meringues are crisp.
Step 6
Place all passion fruit curd ingredients in a double boiler.
Step 7
Stir constantly over medium heat until thickened.
Step 8
This will take approximately 10 to 12 minutes.
Step 9
Cool and place in a bowl. Cover and refrigerate.
Step 10
To serve, place a meringue on a plate.
Step 11
Place a dollup of whipped cream on top. Drizzle passion fruit curd over whipped cream.
Step 12
Add cut up pieces of fruit of your choice.
