Prepping the Peaches
1 ½
kg over-ripe peaches
Making the Jam

Tbsp cinnamon

pinch nutmeg

Notes
This recipe will fill two standard mason jars and can be kept for several weeks. While boiling the peaches it may take 15 to 20 minutes until it looks like jam. After boiling, mash the larger peach chunks to smooth the jam out. Please use over ripe peaches, or even peaches about to turn, the flavor makes a huge difference.
Step 1
Boil peaches for 10 minutes.
Step 2
Cool in ice water.
Step 3
Peal the skin, pit and dice the peaches.
Step 4
Add skinned and pitted peaches into warm pot.
Step 5
Mix in sugar and spices.
Step 6
Boil down while stering until the jam thickens and turns a dark golden colour.
