Ingredients

cup unsalted butter, room temperature

cup light brown sugar, packed

tsp vanilla
1
large egg
cup all-purpose flour

tsp baking soda
½
tsp ground cinnamon

tsp ground nutmeg

tsp salt
dash ground black pepper

cup quick-cook oats

Filling

cup creamy peanut butter
cup icing sugar, sifted
½
tsp vanilla
½
tsp ground cinnamon

Directions

Step 1

Cookies: cream butter and sugar until smooth. Beat in vanilla and egg. In a separate bowl, combine flour, baking soda, spices and salt. Add to butter mixture to blend, then stir in oats. Place the dough on a piece of plastic wrap and shape into a log about 2-inches wide. Chill at least 2 hours before slicing.

Step 2

Preheat oven to 350 °F and line a baking tray with parchment paper.

Step 3

Slice cookies into ¼ -inch slices and place 2 inches apart on prepared baking tray. Bake for 12 to 14 minutes, until browned. Cool cookies before removing from baking tray.

Step 4

Filling: beat all ingredients until blended. Spread filling on bottom of one cookie and sandwich with a second. Repeat until all cookies are filled. Store in an airtight container for up to 3 days.
