These delicious peanut crisps are basically ice cream sandwiches – vanilla soft serve or ice cream served up between two crushed ice cream cone and rice cereal wafers.

cups peanut butter

cups crushed ice cream cones

cups rice cereal

cups brown sugar

cup corn syrup

cups margarine
Vanilla ice cream (soft serve or solid)

Notes

Keep Peanut Crisps in the freezer for later consumption.

Step 1

In a large heatproof bowl, stir together peanut butter, vanilla, cones, and rice cereal.

Step 2

In a medium pot over medium high heat, bring brown sugar, corn syrup, and margarine to a boil; boil for 1 minute.

Step 3

Transfer the contents of the pot to the bowl with the peanut butter mixture and stir well.

Step 4

Spoon half of the mixture into a deep baking dish so that it reaches one quarter of the way up the sides of the dish.

Step 5

Spoon ¾-inches of ice cream over top of the mixture and place the pan in the freezer to freeze until solid.

Step 6

Once the ice cream is solid, spoon the remaining peanut butter mixture over the ice cream and freeze until solid.

Step 7

Slice into 24 squares and serve.
