Ingredients

cups water or vegetable broth

cups quick-cooking rice

Tbsp canola oil
1
small onion, chopped
1
green bell pepper, chopped
1
red bell pepper, chopped
2
cloves garlic, minced
¼
tsp red pepper flakes
3
green onions, chopped
3
Tbsp soy sauce
1
cup frozen peas, thawed
2
tsp sesame oil
Salt and pepper
¼
cup peanuts (optional)
Fresh cilantro or parsley, chopped (optional)

Directions

Step 1

Bring water or broth to boil and stir in rice. Reduce heat; cover and simmer for 10 minutes or until all liquid is absorbed.

Step 2

In a wok, heat oil over medium heat. Cook onion, peppers, garlic, and red pepper flakes for 3 minutes or until softened. Increase heat to medium high and stir in cooked rice, green onions, and soy sauce. Stir fry for one minute. Add peas and cook for an additional minute. Remove from heat and stir in sesame oil. Add salt and pepper to taste. Sprinkle with peanuts and cilantro, if using.
