Ingredients

½
cup (125 ml) toasted pecans
1
cup (250 ml) All-Bran Original* cereal or All-Bran Buds* cereal

Tbsp (15 ml) fresh rosemary leaves
½
tsp (2 ml) each, salt and pepper

oz salmon fillets

cup (50 ml) olive oil

Directions

Step 1

In a food processor, combine pecans, cereal and rosemary until it resembles coarse crumbs.

Step 2

Heat oil in a pan over medium heat. Season fillets with salt and pepper and brown fillets on all sides. Transfer to a shallow baking dish and top with pecan mixture.

Step 3

Bake at 200C (400F) for 6-8 minutes or until fish is cooked through and top is golden. Serve immediately.

Step 4

Cook the salmon with the skin on and remove just before serving to keep the fish from falling apart when cooking.

Step 5

Variation – Pecan Bran Crusted Halibut: Replace the salmon with an equal amount of halibut filets
