You can also put pineapple juice in a squeeze bottle and drizzle over a slice to add décor to plate, or add an edible flower beside.
Put eggs and sugar in a bowl, whip with a whisk for 15 mins, or use an electric mixer on low until thick and light yellow.
In another bowl whip your whipping cream with an electric mixer till soft peaks form, add vanilla and mix till just incorporated.
Place pineapple, minus the juice in a grinder and puree. Reserve juice. Combine pineapple and egg mixture, stir.
Then fold in whipping cream till incorporated.
Line a loaf pan or mini loaf pan with saran wrap and pour mixture in, fold excess saran wrap over top to cover and place in freezer for 3 hours.
Take out 15 mins before serving. Slice into ½ inch thick slices and lie out on individual serving dishes.
