Regardless of the occasion, nothing beats a cookie painstakingly iced by your child. Better still, cookies are simply a great, heart-felt kid-to-dad Father’s Day treat.
Makes about 2 dozen

Cream together the shortening and the sugar with a hand mixer in a medium bowl.
Add the lemon zest, vanilla, egg and milk and beat until combined.
In a small, separate bowl combine the flour, baking powder and salt. Mix well.
Gradually pour the flour mixture into the wet mixture and mix until a dough ball starts forming.
Finish shaping the dough on a floured surface. Divide it in half, wrap in saran and allow to chill for 1 hour in the fridge.
After an hour remove dough. Preheat the oven to 350°F. Roll the dough out to about 1/8” thick and cut out whatever shapes you like. Repeat until you have used up all the dough.
Place the unbaked cookies on a tray lined with parchment and bake them for 7-8 minutes or until the edges turn lightly golden. Cool.
Make a simple icing by mixing 3-4 tablespoons of icing sugar with enough lemon juice to form a thick paste. Add food colouring. (You will need several batches of different colours.)
Decorate cookies and allow to dry thoroughly before stacking into a sealed container for storage.
