Refreshingly sweet figs poached in a tart red wine and smooth balsamic vinegar.

cup fruity red wine
½
cup vinegar, balsamic
2
Tbsp honey
1
Tbsp lemon juice
1
cinnamon, stick

medium fresh purple fig

Step 1
The key here is to gently poach the figs for a short time, allowing them to keep their shape but infuse them with the rich flavour of the wine and vinegar.
Step 2
In a medium saucepan combine wine, vinegar, honey, lemon juice and cinnamon.
Step 3
Bring to a boil then reduce the heat.
Step 4
Simmer uncovered until liquid is reduced by a third.
Step 5
Pierce the figs gently with a fork to allow poaching liquid to penetrate them.
Step 6
Figs should not be peeled
Step 7
Lay the figs in the poaching liquid then poach over low heat for 10 to 15 minutes or until figs are plump and still hold their shape.
Step 8
Remove the figs from liquid. Increase heat and boil further reduce poaching liquid until syrupy.
