directions

Step 1

In saucepan, bring water to boil; add onion, lemon, bay leaves, parsley, peppercorns and salt. Reduce heat, cover and simmer for 15 minutes. Strain into clean saucepan and bring to boil over high heat. Add shrimp; cook until pink and opaque, 2 to 3 minutes. Drain and let cool.

Step 2

(Make-ahead: Refrigerate in airtight container for up to 24 hours.)

Step 3

Mix mayonnaise and ketchup in bowl. Add lemon juice and Worcestershire sauce to taste.

Step 4

Serve over Salad or as Shrimp Dip.

Step 5

To Make Shrimp Tree: Place cone in the center of a plastic foam square and draw a circle around the base of the cone. Cut out the circle and insert cone. Cover base of cone with overlapping leaves of endive. Fasten endive to the plastic foam with toothpick halves. Start at the outside edge of the base and work up. Cover fully with greens to resemble Christmas tree. Attach shrimp to tree with toothpicks.
