Poppy Seed Orange Shortcake with Mixed Berry Sauce

Shortcakes

cup flour, sifted
¼
cup sugar
1 ½
tsp baking powder
pinch salt
grated zest of one orange

Tbsp poppy seeds
cup cold butter
cup fresh orange juice
½
cup milk
¼
cup 35% cream

Mixed Berry Sauce

1 ½
cup mixed frozen berries
½
cup sugar
juice of one lemon

Tbsp cornstarch

Flavoured Whipped Cream

cup 35% cream
1
Tbsp Grand Marnier liqueur

Step 1

Combine sifted flour, sugar, baking powder and salt in a bowl. Add orange zest and poppy seeds.

Step 2

Cut in cold butter until mixture resembles coarse meal.

Step 3

Combine orange juice, milk, and cream. Add liquid gradually to dry ingredients. Mix until dough just comes together.

Step 4

Roll dough out to 3/4-inch thickness. Cut into 2½-inch rounds.

Step 5

Line a baking sheet with parchment paper. Place shortcakes onto baking sheet and freeze. If you wish to leave these in the freezer for a later date, wrap the cakes in 2 layers of plastic wrap and keep in freezer. Bake at 375 degrees F. for 20 to 30 minutes straight from the freezer.

Step 6

Combine all ingredients in a saucepan. Bring to a boil and let simmer for 5 minutes until cornstarch cooks out.

Step 7

Whip cream with Grand Marnier. Spoon berry sauce over shortcakes and top with flavoured whipped cream.
