Preheat a Panini grill over medium-high heat.
Place two slices of the mozzarella cheese onto each half of the foccacia bread. Layer the Gorgonzola cheese, sliced prosciutto, fresh figs and fresh basil on top of the bottom half of the bread. Season cracked black pepper and drizzle the extra virgin olive oil on top. Place the top of the foccacia slice onto the top of the filling and press the sandwich down to compress it slightly.
Place the filled sandwich onto the preheated panini grill and drizzle approximately 1 tbsp. of olive oil in top. Close the Panini grill and cook until golden and crispy. Remove from heat and slice the Panini in half and serve while still hot.
