Warm brandy gets extra oomph with dried prunes and apricots.

cup dried pitted prunes
1
cup dried whole apricot
1
cup water
½
cup sugar
⅓
cup brewed espresso roast coffee
2
cinnamon, sticks
4
star anise
4
whole black peppercorns

large pieces lemon, zest
1 ½
cup brandy, preferably Metaxa

Step 1
Combine the prunes and apricots in a sterilized jar, so fruit fills half of a 2 litre size jar.
Step 2
In a large saucepan combine the remaining ingredients, except brandy.
Step 3
Bring to a boil over high heat.
Step 4
Reduce heat to low and simmer uncovered for approximately 10 minutes or until syrup is reduced by one third.
Step 5
Add the brandy to the syrup and remove from heat.
Step 6
Pour syrup over fruit in the jar and let cool. Seal with lid.
Step 7
Ready to serve. Refrigerate after opening.
