Raclette is similar to a fondue where chunks of raclette cheese are melted on a special raclette griddle and then scraped and served with crusty bread and cornichons. Raclette cheese is a Swiss cheese similar to Gruyere and you can buy it at specialty cheese shops and high-end supermarkets. Yield is 4 servings.

oz raclette cheese, sliced into 4 slices

mini new potatoes, boiled until tender and cut in half

thick slices crusty bread
½
cup cornichons

Step 1

Preheat the raclette griddle.

Step 2

Put the cheese slices in the raclette pans and put the pans on the griddle.

Step 3

Melt the cheese for 5 minutes.

Step 4

Serve the melted cheese and potatoes with the crusty bread slices and the cornichons.
