Spanish onion, thinly sliced

head red cabbage, shredded

carrot, shredded
½
cup extra virgin olive oil
¼
cup lime juice
¼
cup white vinegar

Tbsp liquid honey
2
Tbsp dried oregano leaves
Salt and pepper
¼
cup chopped fresh cilantro

Step 1
Place onion in a large bowl and cover with cold water; let stand for 10 minutes. Drain well.
Step 2
In a large bowl combine cabbage, carrot, and onion.
Step 3
In another bowl, whisk together oil, lime juice, vinegar, honey, oregano, and salt and pepper to taste. Pour over cabbage mixture and let stand for 20 minutes, stirring occasionally.
Step 4
Stir in cilantro and adjust seasoning before serving.
