avocados, peeled, pitted and cut into strips

slices smoked salmon, cut into strips
3
oz (100 g) mesclun (spring greens)

red basil leaves, minced
2
mandarin oranges
Yogourt Vinaigrette
2
cup (500 mL) plain 2% yogourt
4
oz (125 g) Black Diamond Mild White Cheddar Cheese, diced
1
Tbsp (15 mL) Dijon mustard
4
Tbsp (60 mL) lemon juice
4
Tbsp (60 mL) olive oil
4
fresh dill branches, minced
2
tsp (10 mL) capers

Step 1
Using four verrines or serving bowls, layer ingredients in the following order from the bottom: mesclun, smoked salmon, avocado, mandarin wedges. If the verrine is high, repeat layers.
Step 2
Mix together all vinaigrette ingredients.
Step 3
Pour yogourt vinaigrette over ingredients. Garnish with red basil leaves and serve.
