For a beautiful presentation, cut the carrots in long pieces and arrange on bed of parsley.

lb(s) carrots, peeled and cut in half lengthwise

Tbsp vegetable oil
2
tsp salt
2
Tbsp fresh thyme
1
Tbsp honey

Directions
Step 1
On a parchment-lined baking sheet, combine carrots, oil, salt, thyme and honey.
Step 2
Roast in a preheated 400°F (200°C) for 30 to 40 minutes, or until caramelized and tender.
