Herbs de Provence is an assortment of dried herbs from southern France. It commonly contains basil, fennel seed, lavender, marjoram, rosemary, sage, savory, and thyme. You can get it at upscale supermarkets and spice shops. Yield is 4 servings.

Flavouring

small garlic, cloves, minced
tsp Dijon mustard
⅓
cup honey

cup lemon juice

Tbsp oyster sauce

Tbsp herbes de Provence
coarse salt and pepper
Chicken
1
whole chicken, (3 pounds)

Tbsp canola oil, for rubbing poussins, plus more for oiling grill
coarse salt, and freshly cracked black pepper

Step 1
Mix all the flavouring ingredients together and put it in a large bowl.
Step 2
Add the chicken and turn to coat with the flavouring.
Step 3
Preheat oven to 375 degrees F.
Step 4
Rub chicken lightly all over with oil and season with some salt and pepper.
Step 5
Put the chicken in a roasting pan and put it in the oven.
Step 6
Roast the chicken for about and hour or until juices run clear and has an internal temperature of 175 to 180 degrees F.
Step 7
Serve with Provencal-style vegetables such as zucchini, eggplant, tomatoes and onions.
