cup dried Romano beans
3
Tbsp olive oil
2
large shallot, chopped
2
cloves garlic, finely, chopped
1
yellow pepper, diced
1
small bunch spinach, washed, stemmed
2
Tbsp chopped fresh dill
several stems chopped fresh chives
salt and pepper, to taste
pinch freshly grated nutmeg

Step 1
Soak beans in water for about 6 hours. Drain.
Step 2
In fresh cold water, cook beans for 30 to 40 minutes or until just tender. Drain and set aside.
Step 3
Heat olive oil in a large skillet over medium heat. Sauté the shallots for 2 minutes until soft.
Step 4
Add the garlic and continue to sauté for 1 minute until soft.
Step 5
Add the yellow pepper and toss for 3 minutes.
Step 6
Add remaining ingredients and cooked beans. Toss through just to warm. Adjust seasoning.
