ingredients

Lemon Curd

egg yolks

cup sugar
cup lemon juice

Tbsp lemon zest

Tbsp butter, chilled and cut into small pieces

Raspberry Coulis

cup raspberries
¼
cup sugar

Tbsp cassis-flavoured liqueur

Assembly

vanilla cookies, crushed

Tbsp whipping cream, whipped to soft peaks

Step 1

Whisk together egg yolks and sugar in a metal bowl over a pot of boiling water.

Step 2

Whisk in lemon juice and zest to mixture.

Step 3

Leave on heat, whisking constantly, until the mixture thickens.

Step 4

Remove from the heat and mix in butter a piece at a time.

Step 5

Chill.

Step 6

Place raspberries in saucepan and cook down on medium heat.

Step 7

Add sugar and cassis as needed to sweeten.

Step 8

Remove from heat and strain out the seeds.

Step 9

In parfait glasses, layer vanilla cookies, a scoop of curd and coulis.

Step 10

Finish with a dollop of whipped cream and garnish with a fresh raspberry and mint leaf.
