g salmon filets (skin removed )

medium size paper bag
Aluminum foil

pkg Uncle Ben’s Fast and Fancy Mushroom rice

Mediterranean Vegetables

green pepper
½
red pepper

tsp olive oil

Roma tomato

tsp thyme leaves
Fresh ground pepper to taste

Step 1

Spray nonstick pan with cooking spray.

Step 2

Wash salmon with cold water, pat dry and season one side.

Step 3

Sauté, spice side down, over medium-high heat approximately 1 minute.

Step 4

Season, turn and sauté other side.

Step 5

Wet the outside of paper bag thoroughly under cold water.

Step 6

Spray large piece of aluminum foil, shiny side up, with cooking spray.

Step 7

Arrange salmon filets on foil. Turn edges to prevent leaking and pull the foil into the wet bag. Curl the end of the bag tightly and place in hot oven for 20 minutes.

Step 8

Prepare rice in a medium size microwave-safe pot with lid according to package directions.

Step 9

Microwave 12 minutes and let stand for 5 minutes.

Step 10

Reserve one salmon filet for Seafood Chowder.

Step 11

In the uncleaned salmon pan

Heat oil over medium heat.

Step 13

Chop all vegetables into small cubes and gradually add to pan.

Step 14

Add spices to vegetables and stir.

Step 15

Reduce heat and simmer uncovered.

Step 16

When timer rings for rice, let stand.
