Cooking spray

fillets 4 boneless skinless salmon filets (approx 6 oz or 170 g each)

tsp Mrs. Dash Original Seasoning per filet

cup 2 cups cranberry juice

tsp 2 tsp lime juice
1 ½
cup cups basmati rice
3
cup 3 cups water
5
cup 5 cups frozen broccoli florets (approx 1 lb or 450 g)
½
tsp Mrs. Dash Table Blend
Butter (optional)

Step 1

Spray a nonstick stove-top pan with cooking spray.

Step 2

Wash salmon under cold water, pat dry with paper towel and season one side.

Step 3

Sauté, spice side down, over med-high heat approx 2 minutes.

Season top, turn and sauté other side.While salmon is searing…

Step 5

Combine cranberry and lime juice in a wide bottom stove top pot.

Step 6

Bring to a boil on high heat, and then reduce heat to medium-low for a low simmer.

Step 7

Reduce juice to 1/2 then remove from heat until ready to serve.

Step 8

Combine rice and water in a large microwave-safe pot with lid.

Step 9

Cover and microwave at high 10 minutes, then medium 10 minutes.

Step 10

Rinse broccoli in a colander under cold water.

Step 11

Place in microwave-safe pot or casserole with lid.

Step 12

Cover and microwave at high for 5 minutes.

Step 13

Stir in seasoning.

Step 14

Add butter if you must. Enjoy!
