This hearty frittata is a great brunch dish to feed a crowd – or the perfect reason to serve eggs for dinner. Brought to you by Uncle Ben’s.

Tbsp (15 mL) oil

hot or mild Italian sausages, casings removed
½
cup (125 mL) red onion, finely chopped
2
clove garlic, minced
2
cup (500 mL) baby spinach, chopped
1
cup (250 mL) UNCLE BEN'S® Wholegrain Brown Rice
½
cup (125 mL) feta, crumbled
½
cup (125 mL) roasted red peppers, thinly sliced

eggs
½
cup (125 mL) milk
½
tsp (2 mL) each salt and pepper

Step 1
Preheat the oven to 400ºF (200ºC). Heat the oil in an ovenproof, nonstick skillet set over medium-high heat. Crumble in the sausage meat with onion and garlic. Cook for 5 minutes or until browned.
Step 2
Stir in the spinach, UNCLE BEN’S® Wholegrain Brown Rice, roasted red pepper and feta. Whisk the eggs with the milk, salt and pepper. Pour the mixture into the skillet and let stand for 1 minute. Run a spatula around the skillet to loosen the edge.
Step 3
Bake for 10 to 12 minutes or until set. Cut into wedges to serve.

Tip: Tightly wrap foil around the plastic handle of a skillet to make it ovenproof.
