Sea bream is an incredibly versatile fish that makes for a lighter meal that’s still full of flavour. With shaved almonds, blood orange and fresh basil, you can whip up this scrumptious Mediterranean dish from Chef Dustin Gallagher in just 25 minutes.

Begin by heating a small pan to medium-high heat. Once hot, add sliced almond and toast. Swirl pan frequently to avoid burning. Once toasted set aside.
On a cutting board, slice fish into very thin pieces. Use a sharp knife to ensure the fish is slices as thin as possible. Place fish onto a small serving platter or plate then drizzle with fresh squeezed lemon juice and oil.
Cut blood orange segments into small 1” pieces, ensuring all pith is removed. Place orange, toasted almonds, olives, thin sliced red pearl onion, and teared basil on top of fish.
Sprinkle with a pinch of malton salt, and serve.
