Don’t limit this to strawberries. A mixture of berries like raspberries, blueberries and strawberries or sliced peaches are delicious too. The shortcake is also great split and spread with fresh strawberry jam.

COMBINE first 5 dry ingredients in mixing bowl. Cut in shortening with pastry blender until mixture resembles coarse crumbs. Combine Natrel Lactose Free Milk and lemon juice. Let stand 5 minutes, then stir. Add liquid to flour mixture, stirring just until moistened. Spread dough in greased 8” (20 cm) square cake pan. Bake at 400°F (200°C) for 17 to 23 minutes, or until light golden. Cool.
TO SERVE, cut cake into squares; cut each square in half horizontally. Spoon berries over bottom half; add a spoonful of ice cream. Repeat layers with top of cake, more berries and ice cream.
Tip:
A sprinkling of sugar over the shortcake before baking is nice.
Mix berries with a bit of sugar and orange liqueur. Let stand about an hour before using.
