You can quickly put together this scrumptious main course and for extra protein you can add leftover chicken.

oz spaghetti

cup chopped cucumber
½
sweet red chopped pepper

cup beans, sprouts
¼
cup peanuts, unsalted, chopped

Tbsp rice vinegar

Tbsp chicken stock
2
Tbsp vegetable stock

Tbsp toasted sesame seeds
1
Tbsp sesame oil
1
Tbsp soy sauce
1 ½
tsp minced ginger, root
½
tsp granulated sugar
¼
tsp Asian chili paste
2
cloves garlic, minced
¼
cup chopped fresh coriander, (optional)

Step 1
In pot of boiling salted water, cook pasta for 8 minutes or until tender but firm.
Step 2
Drain and chill under cold running water; drain and place in bowl.
Step 3
Add cucumber, red pepper, bean sprouts and peanuts.
Step 4
Whisk together vinegar, stock, sesame seeds, sesame oil, soy sauce, ginger, sugar, chili paste and garlic; toss with pasta mixture.
Step 5
Sprinkle with coriander (if using).
