Wash chicken wings in cold water.
In a large bowl, combine self-rising flour with salt and black pepper and mix thoroughly. Place chicken wings in flour mixture & lightly coat each wing with flour mixture.
Heat 1 inch (2.5 cm) of grease in cast-iron skillet on high. Drop coated chicken wings into hot grease and fry for 25 minutes or until golden brown. Remove chicken from grease and drain.
