Epic enough for an outdoor summer party yet simple enough for any night of the week, this recipe is a winner! It features all the staples: shrimp, smoked sausage, potatoes and corn. Be sure to use a fully thawed raw shrimp with the tails on and don’t be afraid to add more of your favourite shellfish! Think: clams, mussels or lobster.
In a large pot add the water, beer, old bay, garlic, onion and potatoes. Bring to boil over medium heat and cook for 10 minutes.
Add the smoked sausage and corn, simmer for 5 minutes.
Add the shrimp. Simmer until cooked throughout, about 2 to 4 minutes.
Remove from heat and strain, reserving ½ cup of liquid.
Transfer to a serving platter. Drizzle with cooking liquid and melted butter. Garnish with lemon wedges and parsley and serve immediately.
