Use our Smoked Tofu to make this deli-style Panini. The heat from your Panini press will really bring out the smoky flavours of the tofu.

Ingredients

pkg (70 g) Soyganic Smoked Tofu, cut into ¼-inch-thick slices
1
whole wheat panini flatbread or ciabatta bread
1
Tbsp (15 mL) sun-dried tomato pesto
½
cup (125 mL) shredded low-fat, low-sodium mozzarella cheese
4
slices large tomato
½
cup (125 mL) alfalfa sprouts

Directions

Step 1

Preheat a panini maker, grill pan, or griddle to medium heat or medium-high heat. Cut flatbread in half horizontally.

Step 2

Spread tomato pesto on each half of the flatbread.

Step 3

Layer the cheese, then the tomato slices, tofu and sprouts onto one half of the flatbread.

Step 4

Top with the other half of the flatbread and place onto the panini grill for 1-2 minutes until the bread is crisp and golden and the cheese has melted.

Step 5

Cut in half diagonally and serve immediately.
