Tbsp (75 ml) extra virgin olive oil

clove garlic, chopped

tsp (5 ml) chili pepper flakes (optional)

small zucchini, thinly sliced

cherry tomatoes, halved

bunch fresh, flat-leaf parsley, chopped

Step 1

Cook your pasta. By the time it’s done, your sauce will be ready. Pour the olive oil into a pan heated over medium-high heat. Then in go the garlic, chili pepper flakes and zucchini. Sauté for a minute, keeping an eye on it to make sure the zucchini doesn’t burn. Add the cherry tomatoes and some salt. Cook until zucchini and tomatoes get soft. When spaghetti is ready toss in the pan and cook together. Remove from heat and add the raw shrimp. The steam from the pasta will cook the delicate shrimp quickly. Finish with parsley and a drizzle of olive oil.
