Spiced Olive Oil

Ingredients

cup olive oil

whole star anise
1 ½
tsp whole cardamom, seeds, toasted
½
tsp freshly grated nutmeg
2
tsp fennel, seeds, toasted
1
Tbsp green peppercorns

Directions

Step 1

Preheat oven to 225 degrees F.

Step 2

Combine oil, 20 star anise, cardamom, nutmeg, and fennel in a saucepan.

Step 3

Bring just to a boil. Cover and place in oven for 2 hours. Remove from oven and cool.

Step 4

Strain into a bottle. Add 10 star anise and green peppercorns.

Step 5

Cap and refrigerate. Use within 5 days.

Step 6

Makes 4 cups.
