Your choice of fried basa or cod fillets seasoned with herbs and spices and topped with a zesty homemade salsa.

ingredients

green onions, sliced

shallots, chopped

beefsteak tomatoes, chopped

cloves garlic, minced
1
cup pitted green olives, chopped
1
red bell pepper, chopped
¼
cup capers
1
lime, zest and juice
6
pieces basa or cod fillets
cup canned chipotles, chopped
½
cup cilantro, chopped
Salt and pepper

Tbsp butter, divided
2
Tbsp olive oil
Small flour tortillas (optional)

Step 1

In a large bowl, combine green onions, shallots, tomatoes, garlic, olives, red pepper, and capers. Add zest and squeeze lime juice over mixture; set aside.

Step 2

Rub outside of fish with chipotle; sprinkle with cilantro and season with salt and pepper.

Step 3

Heat butter and oil in a large skillet, fry fish in batches and cook until done, about 6-8 minutes. Place fish on tray and top with salsa mixture.

Step 4

Serve with warm tortillas, if using.
