St. Patrick’s Day is the perfect day to indulge in this fun drink! Combining the two most popular beverages of choice, this ice-cream float is a real Irish treat. It’s perfectly thick and creamy and is loaded with chocolate-y goodness. Topped with Guinness beer, this treat will quickly become a fan favourite.

For the chocolate syrup, in a medium saucepan, whisk together the cocoa powder and sugar until blended.
Add cold water, salt, and vanilla extract and continue to whisk over medium heat until boiling, stirring constantly.
Continue boiling until mixture thickens, about 3 to 4 minutes.
Remove from heat, set aside and cool.
Refrigerate in an airtight container to store for up to a month.
To assemble the float, scoop three to four scoops of vanilla ice cream into a tall glass.
