Sticky Date Pudding with Black

cup butter

cup pitted dates

cup self-rising flour

cup packed dark brown sugar

egg

Black Rum Toffee Sauce

Tbsp butter
½
cup dark corn syrup
⅓
cup light brown sugar
⅓
cup heavy cream
¼
cup dark or black rum

Step 1
Simmer dates in 1 cup water until soft, let stand 5 minutes
Step 2
Beat together ½ cup butter and ¼ cup brown sugar until light and fluffy about 4 minutes
Step 3
Beat in egg until well combined
Step 4
Add flour and salt and mix at low speed until just combined and add dates
Step 5
Pour into greased and floured molds and bake about 15 minutes until a toothpick comes out clean at 325 degrees

Serve warm with rum sauce

In a small saucepan over low heat, combine butter, corn syrup and sugar. When sugar has melted and mixture is bubbling, stir in the cream. Allow to come to a simmer, add rum then transfer to a small pitcher and allow to cool.
