cup all purpose flour
1
egg

Tbsp sugar
pinch of salt
⅔
cup unsalted cold butter, cut into small pieces

Tbsp rum
3
Tbsp 35% cream
4
cup vegetable oil
icing sugar, for dusting

Step 1
Combine flour, salt and sugar in a large bowl.
Step 2
Cut cold butter into flour mixture.
Step 3
Beat egg and add to flour mixture.
Step 4
Alternately add rum and cream in until dough forms into a smooth consistency. Let dough rest for at least half an hour.
Step 5
Turn dough onto a lightly floured surface. Roll dough out very thin. Cut 3 by 3-inch squares or rectangles 2 by 3-inches. Make a small cut in the centre of each piece.
Step 6
Heat the vegetable oil in a deep sided stock pot until very hot or until it reaches a temperature of approximately 350 degrees F.
Step 7
Drop dough squares into hot oil and fry until they are lightly golden brown. Remove from oil and drain on paper towel.
Step 8
Dust with icing sugar and serve.
