This easy strawberry quinoa healthy parfait is layered with yogurt, quinoa and strawberry cherry chia compote. Perfect for breakfast or dessert.
Rinse and cook quinoa as per package directions. Keep aside covered and let it cool.
For compote: Take a small saucepan and add sugar, chopped strawberries, cherries and water to it, place on medium heat once it starts to bubble reduce heat and gently mash fruit with a wooden spoon.
Continue cooking on low heat for 8-10 minutes stirring occasionally; remove from heat add honey and chia seeds.
In a small bowl combine yogurt, honey and vanilla extract and whisk until smooth.
Layer in glasses and serve immediately.
