Preparation time is 30 minutes.
Rinse the calamari. Detach the tentacles, cut them into small pieces, and place them in a pan over a medium heat. Let the liquid that they release evaporate, add the olive oil, and leave the calamari to brown.
In a bowl, mix the breadcrumbs, pecorino or parmesan cheese, parsley, and garlic, thinly sliced, add salt and pepper and the browned pieces of fish. Stuff the calamari with this paste and fry them.
In a separate pan put the thickly chopped red onion, brown in 1 tablespoon of olive oil, salt, pepper, and as much water as needed. Add the calamari and cook over a low heat for about 15 minute until the blonde.
Add the Malvasia wine and cook for another 5 minutes till it evaporates. Spread with chopped parsley. Serve warm.
