slices bacon, chopped

tub (500 g) ricotta cheese
1
corn on the cob, charred and cut off
2
Tbsp capers
1
Tbsp chili powder
6
large jalapeno peppers, cut in half lengthwise and seeds removed

Step 1
Preheat oven to 400ºF (200ºC).
Step 2
In a skillet, cook bacon until crispy. Remove to paper towel lined plate to drain and cool.
Step 3
Stir bacon into ricotta and add corn, capers and chili powder. Spoon mixture into jalapeno halves and place on parchment paper lined baking sheet. Bake for about 20 minutes or until peppers are tender. Place under the broiler for about 1 minute for a golden top. Let cool slightly before serving.
