If this won’t get the kids to eat their veggies I don’t know what will. Carrots, sweet potatoes, onions and potato are grated and spiced just right, then baked until soft and pudding-like, before being torched with a crackling sugary top. It’ll make your chicken sing.

directions
Preheat oven to 350°F.
Grate vegetables in a food processor (or grate by hand). In a large bowl mix together oil, brown sugar, eggs, cinnamon, baking powder, salt and pepper until combined. Stir in vegetables and mix until evenly coated.
Generously grease a 9 x 13-inch baking dish with about a teaspoon of vegetable oil, then pour in vegetable mixture, smoothing the top with the back of a spoon. Bake in preheated oven for 45-50 minutes or until lightly golden.
Evenly sprinkle the top of the kugel with sugar, then get out your handy blowtorch and get that sugar bubbly and browned. It will form a hard surface, ready for cracking. (This step is optional and can be skipped if you don’t have a torch or fear open flames.)
