Sweet Potato Balls

Ingredients

cup water
¼
cup salt
1
lb(s) sweet potatoes, peeled and cubed
1
egg
¼
cup breadcrumbs
¼
tsp cinnamon
¼
Tbsp sugar

Tbsp sugar

Tbsp vegetable oil
1
cup vegetable oil (for frying)

Directions

Step 1

In a large saucepan over medium heat, bring water to boil.
Add salt and sweet potatoes, and cook for 20 minutes, or until potatoes are tender.

Step 2

Strain potatoes and cool, then mash, adding in egg, breadcrumbs, cinnamon, sugar, and vegetable oil.
Roll mixture into 2″ round balls.

Step 3

In medium saucepan over medium heat, fry balls in oil until lightly browned. Place on paper towels to absorb excess oil.

Step 4

To bake in the oven, preheat oven to 400°F. Place balls on greased baking sheet and bake for 20 minutes.
