Sweet Potato Salad with Mustard Vinaigrette

lb(s) sweet potatoes, peeled and cubed
¼
cup olive oil

tsp white wine vinegar

Tbsp Dijon mustard
¼
tsp salt
4
green onions, sliced

Directions

Step 1

Place the potatoes in a large covered pot and boil in salted water for 10-12 minutes, or until fork tender.

Step 2

Whisk together oil, vinegar, mustard, and salt.

Step 3

Strain potatoes and place in a bowl. Pour dressing over warm sweet potatoes. Cool salad for 10 minutes. Add sliced green onion and gently toss before serving.
