This fun and delicious recipe is a great one for kids to get involved in cooking and try different herbs of their choosing.

lb(s) Terrific Trio potatoes, fully cooked (steamed or boiled)
1
bunch fresh herbs of your choosing (thyme, rosemary, oregano, parsley), tips only

Tbsp olive oil
Salt and freshly ground pepper, to taste

Step 1

When potatoes are cool enough to handle (can be cooked in advance and refrigerated), cut in half. Heat oil in a pan over medium heat and season pan with salt and pepper. Carefully place a herb tip in the pan then press cut side of potato down over top and press gently down (mix it up – you can go as simple as parsley or, get fancy with lavender). Repeat with other potatoes until you fill your pan.

Step 2

After 3-4 minutes use a spatula to lift potato- surface should be golden brown with herb “tattooed” to potato. If not continue cooking until brown then flip over to brown other side and warm throughout.
