Flavourful steamed mussels in coconut milk and lemon grass.

Tbsp vegetable oil

large sweet onion, sliced
3
cloves garlic, chopped
1
Tbsp fresh grated ginger
3
lemongrass, sliced
¼
tsp seeds, cumin, ground
1
orange, zest, and, juice of
1
lime, zest, and, juice of
½
tsp coriander seeds, ground
⅓
cup dry white wine
½
cup coconut milk
3
lb(s) PEI mussel, bearded, and, scrubbed well to remove dirt
¼
cup coriander, chopped

Step 1
In a large deep skillet heat oil. Add onion and garlic.
Step 2
Sauté for 3 minutes. Add ginger, chile, lemongrass, cumin, citrus zest and coriander seed and sauté for 5 minutes to develop flavour.
Step 3
Add wine, coconut milk, juices and mussels.
Step 4
Cover and steam over medium heat for 5 to 7 minutes or until mussels open.
Step 5
Remove from heat immediately.
Step 6
Stir in fresh coriander and adjust seasoning.
