Preheat oven to 400°F.
Place all the ingredients in a large roasting pan, drizzle with olive oil and sprinkle with kosher salt. Roast for about 75 minutes.
Set roasting pan on the stovetop over medium heat. Add 8 cups of boiling water, scraping up any brown bits as you stir. Sprinkle in flour and stir to ensure no lumps form. Simmer for 30 to 40 minutes, smashing with a potato masher every now and again.
Pour through a fine mesh sieve into another pot. Let cool. Store in the fridge until ready to use.
*If serving with your holiday turkey, reserve any juices from your bird and add this to your make ahead gravy.
