This is Orlando Meats’ award-winning signature dish. Made from ultra-premium meat, house-made XO Sauce and topped with flavourful aioli, this burger is truly unique.

ingredients

XO Sauce

cups (675 mL) charcuterie scraps

cup (225 mL) shallot chopped
½
cup (118 mL) ginger
½
cup (118 mL) garlic
½
cup (125 mL) black vinegar
¼
cup (60 mL) soy sauce

Burger

6 ½
ounce ground meat, per burger

Fermented Garlic Aioli

3
egg yolks
1
tbsp (15 mL) Dijon
2
tbsp (30 mL) apple cider vinegar
1
cup (225 mL) fermented garlic

Assembly

1
French roll
French fries
Ketchup
1
slice provolone cheese

Notes

Yield: 1 qt XO Sauce, 1 burger

Step 1

Brown charcuterie scraps, shallot, ginger and garlic in a pan.

Step 2

Add black vinegar and soy sauce and simmer for 2 hours. Reserve for later.

Step 3

Weigh 6.5-oz balls of ground meat per burger.

Step 4

Use a square ring mold to shape ground meat into square.

Step 5

Whisk ingredients together.

Step 6

Toast and butter the French roll.

Step 7

Sear burger for 4 minutes. Flip meat.

Step 8

Place provolone cheese on burger. Sear burger for an additional 4 minutes or until done.

Step 9

Spread mayo on bottom bun then XO sauce on top bun. Place burger inside bun.

Step 10

Serve with French fries and ketchup.
