Baked Beans

g beans, soaked in water for 12 hours

goose

onions, chopped

heads of garlic, peeled

cup homemade ketchup (see below)
1 ¼
cup maple syrup

tsp mustard powder

Ketchup

tomatoes, seeded and diced

onion, chopped roughly

g sugar

g white wine vinegar

g quatre-épices

branches thyme, stripped

Step 1

Place all ingredients in a pot and mix well.
Fill halfway with water and cover.

Step 2

Cook in the oven for 4 hours at 250?F (120?C).
After 2 hours, remove the goose carcass.

Step 3

In a pan, sweat the onion and thyme in a little oil.
Add vinegar and sugar, and simmer until syrupy.
Add the tomatoes and allow to sit for 20 minutes.
