A creamy dessert-style That’s the Spirit martini inspired by my favourite holiday cookie: This gingerbread martini features a vodka spirit base with Irish cream and a homemade gingerbread simple syrup.
The simple syrup will stay fresh in the refrigerator for up to two weeks, making this drink the perfect festive cocktail to enjoy all holiday season long!

For the simple syrup:
For the martini:
For the simple syrup, in a saucepan over medium heat add the water, sugar, cinnamon, cloves and ginger.
Bring to a boil and cook until sugar dissolves, about 2 minutes.
Remove from heat and let stand for 15 minutes before straining.
Strain mixture & refrigerate until ready to use.

For the martini, to a cocktail glass filled with ice, add the vodka, Irish cream, coffee liqueur and gingerbread syrup.
Stir until well combined.
Rim glass with gingersnap crumbs and drizzle with caramel sauce.
Strain martini mixture into glass.
Garnish with a dollop of whipped cream and additional gingersnap crumbs if desired.
